Every christmas dad always buys a huge piece of meat to roast. Here’s a little something to go with the left overs.

With an abundance of crab apples growing in the gardens of Fife, a jelly was an obvious choice for a special winter condiment. Always made from fresh crab apples this jelly is a seasonal treat.

Mr. Trotter loves a good The Bloody Mary Cocktail but has yet to find a Bloody Mary chutney where you can actually taste the Vodka, and it seemed a shame to take it out!

With the abundance of soft fruits in Fife during the summer, it’s hard not to be taking advantage and make jam. Our fruit comes from Blacketyside fruit farm just 9 miles away from our kitchen and, like with all our products, we’re using British sugar made from British sugar beat. so unlike most jams, ours is 100% British

My Great Aunt Dinah gave me the recipe for hot Pepper Jelly. She lives in Jamaica where the Scotch Bonnet Pepper grows, it is this pepper that gives Hot Pepper Jelly it’s Amazing flavor and heat.

Savory jelly made from Sweet peppers and Scotch Bonnet peppers. Scotch Bonnets have a powerful kick but also a delicious flavour. The heat does not last long but instead you are left with a nice fresh pepper flavour.

Mr. Trotter’s parents discovered Mostarda while on Holiday in Italy, it was a delicious discovery but they were unable to find a manufacturer in Scotland. Trotter’s Independent Condiments was born.

What is it…
Mostarda is an Italian recipe, traditionally eaten with cold meats in northern Italy. A dose of mustard gives it a subtle new taste that sets it aside from your everyday chutneys.

When Mr. Trotter was a boy, the only mustard that he liked was this whole grain mustard that his mum used to make, He also loves Scottish honey, so he throw some of that in as well.

A mix of black and yellow mustard seed matured in White Wine Vinegar over night with a delicious sweetness of Scottish Honey added.

Following the success of the Hot Pepper Jelly I decided to increase it’s use buy making a dip version.
The sauce is made form the same scotch bonnet pepper, so it tastes just as good but had a different texture and consistency

A delicious dip made from Scotch Bonnet Pepper so it has a nice kick of heat and is easy to use as a dip a spread or as an ingredient.

A mix of Dates, Sultanas, Apples and Onions marinated (not cooked) in good old fashioned malt vinegar and unrefined brown sugar, with a warming after taste from a dash of Cayenne Pepper.

Mr. Trotter Snr, the famous Fife chef made some wild garlic pesto and Mr. Trotter (Jr) fell in love with it immediately.
This is a really exciting reinvention of the Genoese Sauce. We think it tastes better but we are Scottish.

What it is…
By replacing the basil with wild garlic leaves, (picked by ourselves the same day it’s turned into pesto), the olive oil with Summer Harvest’s Cold Pressed Rapeseed Oil, Parmesan with Fıfe’s own Anster cheese (which we have made vegetarian, specially for us) and pine nuts with walnuts, we’ve created the Scottish version of pesto.
